Superbowl Sunday

The day of debauchery is drawing near...a time we  throw nutrition caution to the wind and eat and drink ourselves silly while we cheer on teams we don't really care about.  I'm talking Superbowl Sunday, and more often than not, it's more about the food than the football.  (Maybe the commercials too.)  However, this year is different because we are in the midst of a Whole30 which limits our mindless food frolicking, and forces us to plan ahead and experiment with other, delicious paleo options that can stand proud on any Superbowl smorgasbord.  This post is to offer you a few ideas for game day.

Paleo Chili

Every proper Superbowl party should have at least ONE chili offering!  I'm going to give you a few options here.
First, let's take the easy way out.  I've found that in a pinch Carroll Shelby's Chili Kit works great.  It's gluten free and if you are going grain free, just omit the masa flour.  I've made it both ways and think they are both great.


Recipe:

1 package Carroll Shelby's Chili Kit
1 lb stew meat or steak cut up into bite size pieces
2 lbs grassfed beef
1 large onion
6 cloves garlic, chopped
*1/2 to 1 jalapeno chopped (remove seeds to decrease the heat) Jalapenos are optional, but not for this Texan.
1- 8 oz can tomato sauce
2- 8 oz cans water
1/3 C. chopped fresh cilantro
1 T. coconut or olive oil
Brown the stew meat in oil until seared on all sides.  Set aside.  Brown ground beef and onion until cooked through. Add garlic and jalapeno if you are using it and saute about 1-2 min more.  Add in the seared steak chunks and stir.
Add the can of tomato sauce and the 2 cans of water, along with the spice packets from the Chili Kit.  (Omit masa flour if going completely grain free.)  Stir and let simmer on low for a few hours until flavors meld.  Add chopped cilantro before serving.  If you miss the beans in the chili, chop up half of a butternut squash into bitesize pieces and add to the stew.  Cook about 2 hours on low until the squash pieces are soft.  It is surprisingly tasty!

The three packets on the left are spices, salt, and cayenne pepper. You can modify the heat depending on how much pepper you use. Omit the beige masa packet if you are going grain free. It is still gluten free, however, if you use it.
Another delicious chili offering come's from Everyday Paleo's Sarah Fragoso.  She has an incredible recipe for Chicken Chili Soup.  Click on the link if you want to try it!  I've made it before and it is outstanding.  Another favorite is the Paleo Chili from Paleo Table.  Their site is jam packed with great recipes and this one will not disappoint.  It is this recipe where I learned to throw some steak in with the ground beef and to add butternut squash for the beans.

Another great protein offering comes from Martha Stewert.  She made Bacon Wrapped Chicken Tenders and they are easy and good.  The link is a video how to.  I like to make my own chipotle mayonaise for dipping.  Just use the paleo mayonaise recipe from the recipe section and add chipotle powder to taste. 

How about a little Faux-tato salad as a side?  This cauliflower potato salad is the real deal. 
Chili Lime Chicken Wings from Nom Nom Paleo
Rosemary Crackers from Elana's Pantry are delicious.  Be sure to use parchment paper when you bake them.  You can dip them in Paleo Baba Ghanoush from Jen's Gone Paleo.
Guacamole and Plantain chips
Bacon Wrapped Dates
Sweet Potato Chips
Prosciutto Wrapped Asparagus spears from Nom Nom Paleo

This should be a good start to planning your ultimate Paleo Superbowl Party!!  Get busy, experiment, and make something memorable...even if your team is not!
