First, let's take the easy way out. I've found that in a pinch Carroll Shelby's Chili Kit works great. It's gluten free and if you are going grain free, just omit the masa flour. I've made it both ways and think they are both great.
1 package Carroll Shelby's Chili Kit
1 lb stew meat or steak cut up into bite size pieces
2 lbs grassfed beef
1 large onion
6 cloves garlic, chopped
*1/2 to 1 jalapeno chopped (remove seeds to decrease the heat) Jalapenos are optional, but not for this Texan.
1- 8 oz can tomato sauce
2- 8 oz cans water
1/3 C. chopped fresh cilantro
1 T. coconut or olive oil
Brown the stew meat in oil until seared on all sides. Set aside. Brown ground beef and onion until cooked through. Add garlic and jalapeno if you are using it and saute about 1-2 min more. Add in the seared steak chunks and stir.
Add the can of tomato sauce and the 2 cans of water, along with the spice packets from the Chili Kit. (Omit masa flour if going completely grain free.) Stir and let simmer on low for a few hours until flavors meld. Add chopped cilantro before serving. If you miss the beans in the chili, chop up half of a butternut squash into bitesize pieces and add to the stew. Cook about 2 hours on low until the squash pieces are soft. It is surprisingly tasty!
Another great protein offering comes from Martha Stewert. She made Bacon Wrapped Chicken Tenders and they are easy and good. The link is a video how to. I like to make my own chipotle mayonaise for dipping. Just use the paleo mayonaise recipe from the recipe section and add chipotle powder to taste.
How about a little Faux-tato salad as a side? This cauliflower potato salad is the real deal.
Chili Lime Chicken Wings from Nom Nom Paleo
Rosemary Crackers from Elana's Pantry are delicious. Be sure to use parchment paper when you bake them. You can dip them in Paleo Baba Ghanoush from Jen's Gone Paleo.
