Tex Mex Cuisine, here I come!

After a busy weekend, I was looking forward to using this week to work on my blog, finish up some pages, and post something before I left for San Antonio to see my family for spring break.   My plans were dashed on Tuesday when I noticed men working on the cable lines outside my house.  I went to get the paper and one of the lines was hanging on my fence.  “No big deal” I shrugged, as I trusted these guys were professionals and knew what they were doing.  Apparently, Bucket Truck Man didn’t put the positive to the negative because when he left, so did my internet service.  I called our provider and they said they would try to have it fixed in 2-7 days.  What?????  I need it now!!!!  On Wednesday, I decided I could get through this with my iPhone and answer emails and other odds and ends in the palm of my hand.  Then I realized that I am a slow texter, I often hit “delete” instead of the letter “M” and it’s impossible to share links on Facebook with an iPhone.

Yesterday, I went to an internet hotspot to pay bills before I left town, only to lose access to the free WiFi for reasons I still don’t understand. So today, I headed over to Panera and mooched off their free WiFi and tea refills while I did a little work, answered emails, and updated my Facebook page.  As the lunch crowd picked up, hungry patrons buzzed around my table like vultures looking for a place to land.  Yes, I was THAT person with the laptop and the tea.  And you know what?  I didn’t give a rats.  Since I had been put out by the cable company, I could do whatever I dang well pleased.  I had attitude.   When I got home this evening, my universe had been restored.  Internet service was up and running and I no longer lived under a rock.

So now I am in the midst of overpacking for my trip, and thinking about how much fun I will have these next 10 days.  San Antonio IS the Tex Mex capitol of the world and I will definitely enjoy my fair share of the amazing cuisine this culture has to offer.  I’m not gonna lie, these trips to Texas often test the limits of my paleo willpower, so there will be times that I might cross that border into non-paleoville and knowingly choose to indulge in something less healthy.  And I will enjoy and savor every last bite!  However, I hope to make the best choices available to me while still enjoying the delicious food.  I’ll take lots of pictures and show you how to navigate the menus and food offerings of South Texas.  I know this is a limited time offer and when I get back to reality, I’ll dial it back in. 

Speaking of Mexican food, and all things inflammatory, I want to share a link with you about an article written by Dr. Dwight Lundell, a world renown heart surgeon who talks about what really causes heart disease.  (No, it’s not saturated fat, cholesterol and red meat.)  This information is so important because we all know someone who has died from heart disease or is currently battling it now.  Unfortunately, you might be surprised by what Dr. Lundell has to say about how we manage heart disease, and how we’ve been misinformed by the medical community, the media, and big pharma.  Many of us on the “lunatic fringe” have been enlightened by the knowledge and wisdom that has been around for years, but just hasn’t been popular with the mainstream media or the likes of Dr. Oz or Oprah.  Now is your chance to find out what you need to do to improve your health.  Read the link and let me know what you think!

Making Mayonnaise with Tina Forzaglia

I am getting ready to do a nutrition seminar tomorrow for CrossFit XTRA Mile members, and after the seminar, I will be demo-ing a few of my old standby recipes (paleo mayonaise, pico de gallo, and a basic vinaigrette).  These are recipes that I love and want to have on hand all the time to help make my paleo meals more varied, fun and fresh.  So in my effort to get my ducks in a row for tomorrow, I thought about this video that I made a while ago for my Facebook Page "Project Paleo- StL" and thought it would be fun to post it here as well.  Tina Forzaglia is one of my many "friends" who comes to cook with me.  I love her because she doesn't mince words, just onions.  This recipe is great because it tastes so smooth with a nice hint of lemon.  It is delicious with chicken, tuna, or egg salad, or simply spread on a piece of turkey.  If you have a food processor, there is no work at all!

Paleo Mayonnaise
1 egg at room temp.
1 t. Dijon mustard
1 t. salt
juice of ½ to 1 lemon
1 cup  light tasting olive oil (very faint light yellow)  NOT VIRGIN!  I use Bertolli.

In a food processor, combine first 4 ingredients and blend.  With machine running, slowly stream in the cup of olive oil until all ingredients are combined and achieve the consistency of mayonnaise.  Add more salt or lemon juice to taste.  Keeps for about 10 days.

*add chipotle powder to taste to make a good dip for grilled chicken tenders.  Also use in chicken, tuna or egg salad.

Welcome to my paleo table!   Creating this blog has been on my to do list for a while and it feels good to finally get this show on the road.  As I go,  I'm sure it will evolve, but my plan is to write about basic, everyday paleo stuff.  I hope to introduce you to some great recipes, give you some ideas on meal planning, let you in on little paleo secrets, teach you some tricks of the trade, and just keep you in the paleo loop.

This is an exciting time in the nutrition world as we are finally getting smart about what we eat and the choices we make.  We are asking a lot of questions and holding dieticians, doctors, the media, and our government accountable for the recommendations they make.  We have information at our fingertips with a simple click of a google search. We can find answers to our questions if those in authority are not doing their homework.  Why not take the bull by the horns and  pave your own path to good health?  Don't wait until you are sick.  Don't wait until you are obese.  Don't wait until your doctor tells you you have no choice but to make a change.  Today is the day that you can take your health into your own hands.  Read.  Learn.  Evolve.  Every day is a new possibility.  We will get on this path to better health together and I will try to help you navigate all the stuff out there that keeps you from finding your way.
Pull up a chair and help yourself.  There's plenty to go around.
